Black caraway (whose Latin name is nigella sativa) is also known as nigella seed, kalonji, and sometimes black cumin. Native to Asia, black caraway is not to be confused with traditional caraway seeds: it is its own unique species. Nigella its one of the oldest cultivated spices in the world, going back all the way to the Stone Age. Pungent and slightly bitter, it is commonly used in Bengali cuisine and to top breads, especially naan and rye; it’s also traditionally mixed with cheese in the Middle East. Combined with fenugreek, cumin, mustard, and fennel, it creates the traditional Indian and Bengali five-spice blend panch phoron. Try sprinkled on top of vegetables such as potatoes or squash.
