Kala Namak, or black Himalayan salt, is a grayish-pink colored salt very rich in minerals, and with a strong flavor and aroma which is reminiscent of sulfur. Traditionally used as an ingredient in Indian and Pakistani cuisine to flavor roasted chickpeas or chutneys, is also used in vegan cuisine for scrambled tofu, since its flavor is quite egg-like. Due to its peculiarities, Kala Namak is best used in combination with other herbs and spices as a seasoning blend rather than as a table or a finishing salt.
