This curry take the most famous flavors of Thai cuisine, lemongrass and galangal, and matches them with dried chiles to deliver a spicy yet very flavorful curry powder. Mix it with equal parts water (or coconut milk) and oil for an authentic red Thai curry paste. Other than in curries, a number of other traditional Thai dishes are also flavored with red curry paste, including satay sauce, fish cakes and certain sausage. The fresh notes of lemongrass make this curry powder particularly suited for fish, seafood, or tofu.
