Fajitas are an extremely popular dish in Tex-Mex cuisine; the name means “little strips” as the protein and veggies are sliced into strips before cooking. This dish is classically prepared with slices of grilled skirt steak or chicken, but can also be made with pork or shrimp as well, and are usually served sizzling with sautéed bell peppers and onions, along with tortillas and an array of toppings on the side. Whatever type of meat or seafood is used, you cannot make fajitas without spices. Every restaurant will have their own fajita seasoning, and for ours we decided to stick to tradition and combine the fundamental flavors of garlic and onion with ground cumin and oregano, plus sea salt and black pepper. This seasoning is an evergreen combo that perfectly complements the meaty flavors of sizzling fajitas, but is also great for tacos, enchiladas, and as a marinade base: simply combine 1 tablespoon to 1/4 cup of your favorite oil. Naturally vegan and gluten-free.
