Pollo asado is an iconic dish from northern Mexico, traditionally made by grilling chicken that has been generously seasoned with a blend of dried chiles, garlic and lime. This seasoning is inspired by that dish, and captures its key notes: garlicky, with the full-flavored – but not too spicy – heat from dried New Mexico red hatch chiles and smoked serrano chiles, and the zesty notes of real granulated lime peel, rounded out by a touch of turbinado sugar and a blend of other spices. Use it as a dry rub for chicken and fish, but is also delicious for dips and spreads, and even as a seasoning for chicken soup. Naturally vegan and gluten-free.
