Very popular in south-eastern cuisine, long pepper is a variety of pepper that grows in long spikes, and has a hotter and more complex flavor than regular black pepper, with undertones of cardamom, nutmeg, allspice, and pine. Grind it to add heat and mild, musky sweet notes to to veggies and proteins. Particularly nice in stews and dals.
