Very popular in Southeast Asian and particularly Indian cuisine, long pepper is a variety of pepper that grows in long spikes, and has a warmer and more complex flavor than regular black pepper, with undertones of cardamom, nutmeg, allspice, and pine. Grind long pepper like you would regular pepper to add a tad of a bite and its musky and sweet notes to any dish, or use it whole like you would whole peppercorns to make broth or stock. The warm, multi-layered notes of long pepper make it particularly suited to dishes that require a longer cooking time, like lentil or meat stews, and braised dishes.
