Pickling spice is a blend that stands up well to the pickling process and lends complex flavor to preserved fruits, vegetables, and eggs. It usually includes whole or crumbled spices rather than ground. The mixture can be tied in cheesecloth, added during cooking, and then removed, or just left in the jars. Almost any produce can undergo the pickling process, from the classic cucumbers and carrots to more unexpected combos like beetroot, asparagus, watermelon rinds, milkweed buds, and so on. Pickling is a great way to preserve produce, and enables people to enjoy their garden yield during the winter months as well. Pickled veggies are great on their own as well as a yummy addition to charcuterie boards, salads, and rice and grain dishes, where they provide a great acidic component.
