Sunchoke (or Jerusalem artichoke) is a sunflower relative that grows as a tuber and is native to the Northern United States. They used to be a traditional Native American food. Naturally gluten-free, low in calories and high in fiber, sunchokes smell and taste like nutty potatoes. Their flour can be used together with others in gluten-free baking, and can also act as a tastier thickener for stews and gravy, instead of arrowroot or regular flour. Also nice as component of a gluten-free batter in fried and pan-fried dishes.

Grown in Claremont, NH, according to organic principles. Naturally vegan and gluten-free.
