Bonito flakes are dried flakes of young bonito, a type of fish which is prevalent in Japanese cooking. They are a fundamental ingredient of dashi, and can be sprinkled on top of ramen, miso, sushi or kelp salads, or whenever you want to add a touch of Japan to your dishes. They have a funky and smoky flavor, similar to fish sauce.
