Decorticated cardamom is the inner part of the cardamom seed pod, without the shell. Use a spice grinder or a mortar and pestle to grind cardamom when ground cardamom is need in a recipe. Due to the delicate nature of its aromatic qualities, we recommend to store it in the decorticated form and only grind as needed.
