Grains of paradise (also known as melegueta, alligator, or guinea pepper) are a spice native to the West coast of Africa. Very popular in medieval courts, where they were used to brew gin and aquavit, other than to season food, they have recently enjoyed a resurgence as breweries and gin distilleries have started to use them again in limited edition batches, due to their complex peppery flavor with notes of citrus, that goes very well with herbal distillates. Use it as a gourmet substitute of black peppercorns in any dish, or in herbal simple syrups for cocktails or to drizzle over desserts. Naturally vegan and gluten-free.
