This spice has an intense and complex peppery flavor, with lemony undertones. The whole seed has no smell, but once cracked it releases its full flavor and aroma, as well as that tongue-tingling sensation that is usually found in Szechuan peppercorns. Use it as a gourmet substitute for black peppercorns in any dish, or in herbal simple syrups for cocktails and desserts.

Very popular in medieval courts, where they were used to brew gin and aquavit as well as a to season food, they have recently enjoyed a resurgence. They have a complex peppery flavor with notes of citrus that goes very well with herbal distillates and fruit.
