Used especially in Italian, Greek, and other Southern European cuisines, Mediterranean oregano is more delicate than the Mexican variety, but more intense than Turkish oregano. Its sweet yet strong flavor and aroma makes it perfect for pasta sauce, or in a bread dip with other spices, accompanied by a good extra virgin olive oil. Add early or mid-way through cooking (up to 2 hours of cooking time) so the full flavors come through.
