Tarragon is a perennial, culinary herb, used for its highly aromatic nature and fresh flavor. The Siberian variety is stronger that its French counterpart, with balsamic and leathery notes. One of the four “fines herbes” of French cooking, the unique flavor of tarragon works really well in chicken, fish, and egg dishes, as well as in pickling mixes. It’s also a classic ingredient for béarnaise and hollandaise sauce. You can also combine it with mustard, olive oil, and white wine vinegar for a delicious salad dressing.
