Chervil is similar to parsley, but more delicate, with tones of anise. It’s a traditional herb in French cooking, and is often paired with other Mediterranean herbs like tarragon, parsley, or chives. Due to its delicate nature, this herbs is best enjoyed in cold dishes, like vinaigrettes and sauces, or sprinkled on fish, chicken, and vegetables after they have been removed from the heat.

It is a staple in French cuisine and is often called “the gourmet’s parsley”. It’s also often being combined with tarragon, parsley, and chives, a combo traditionally referred to as “French fines herbes”. By itself, chervil is often added to salads, sauces, and vinaigrettes, and traditionally paired with salmon, trout, potatoes, spinach, asparagus and green beans.
