Fenugreek is a common spice in Indian and African cuisine. Its flavor is very potent and unique, often described as a cross between celery and maple. The raw seed can be quite bitter, but the flavor mellows out nicely once fenugreek is toasted or sauteed in clarified butter or oil. We recommend to start by adding a small quantity of fenugreek (1/4 tsp) to any new recipe you are trying out and then add more after tasting, if desired, because its potency might overcome other, more delicate, spices. A fundamental ingredient in many curry powders, fenugreek also pairs very well with lentils and root vegetables, and is excellent for balancing sweet or rich recipes, such as for example coconut-milk based curries.
