Inspired by one of the most famous Korean dishes, this blend can be used to jump-start your own kimchi fermented vegetables – be it the traditional Napa cabbage, or something more unexpected like carrots or brussel sprouts – or as a dry rub for either meat, fish, or meat substitutes, to recreate the fiery flavor of kimchi. This blend is naturally vegan, unlike most commercial kimchi products which contain either fish sauce or dried bonito flakes, so it can be enjoyed by everyone. Mix it with a little boiling water to recreate a hot Korean spicy paste, and use it as a sauce or dressing.
