Description

Black garlic is a signature ingredient in Korean cuisine, created by fermenting raw garlic in a controlled heat and humidity environment for weeks at a time. Its round, umami-forward, and mellow flavor is reminiscent of caramelized onions and balsamic vinegar, and adds a great depth to many recipes, from tofu and grain bowls to Korean BBQ-style fish and rib glazes. We source our black garlic from 1841 Farm in Unity (NH), and grind it fresh to add to our blends. In this seasoning, we combined black garlic with soy sauce powder and other spices to create an intensely aromatic blend with sweet notes typical of many well-known Korean blends such as bulgogi. Use as is for a dry rub on tofu and seitan and to sprinkle on ramen and soups; or mix it with equal parts soy sauce and sesame oil for a great marinade for ribs, swordfish, and more. Naturally vegan friendly and dairy free, contains wheat.
