White pepper is made from regular peppercorns whose black husk has been removed before grinding. White pepper is spicier and sharper than black pepper, with slightly fruity undertones. Use as you would black pepper or in a pepper blend, for any dish that could benefit from an extra kick. This type of pepper is also ideal for lighter-colored dishes and soups when you do not want flakes of black peppercorns to show.
