Daylilies, also called tiger lilies, are a traditional vegetable in Chinese cuisine, unlike in the US, where they are mostly seen as a ornamental flower. The buds are dried before they open, and then used in soups and stir fries. They are also a fundamental ingredient for sweet ‘n sour soup, Buddha’s Delight, and moo shu-style dishes. The dried buds have a woodsy and musky, but slightly flowery, aroma and flavor, and pair really well with dried mushrooms, such as wood’s ear and shiitake. Rehydrate in water for around 10 minutes before use, and trim the end stem. Hand-harversted in Claremont, NH, on organically managed land. Naturally vegan and gluten-free.
