Lemongrass is a tall, perennial grass native to the tropical regions of South East Asia and Africa. The long leaves of lemongrass contain rich, lemon-like oil that is released through the cooking process, and can also be distilled to get lemongrass essential oil. This spice has a predominant lemony flavor with just a touch of ginger, and is a common ingredient in Thai and Indian cuisine. It is often paired with kaffir lime leaves, galangal, ginger and Thai chile powder. Lemongrass powder comes from dried leaves that have been finely ground, and is a great way of adding the flavor of lemongrass to a variety of dishes, since the leaves itself are chewy and cannot be eaten as is. Whisk the powder into coconut milk for a rich, bright flavor to add to soups, curry or sauces, add to marinades or rub into meat, fish, or meat substitutes before grilling, or try emulsifying with olive oil, vinegar, salt and pepper for a tangy salad dressing.
